My mom was a wonderful cook. She enjoyed being busy in her kitchen. In fact she enjoyed being busy in her "little house"as she called it, which she loved (111 Patsy Street). She would be up early in the morning in her kitchen preparing a meal for everybody on just about any occasion, and for dessert oftentimes we would have brownies, which I loved. I also loved her chocolate pecan cake, especially on my birthday.

Mary Martel’s Brownies

    I loved my mother’s brownies so much that one day I asked her to give me the recipe, which I jotted down on an torn envelope. I tried it myself a couple of times, and it was pretty good, though not as special as hers. Here it is.

1 stick of Parkay
2 eggs
1 cup sugar
Mix ingredients until creamy.
Add 3/4 cup of flour.
Add 2 heaping teaspoons of Hershey’s cocoa.
Mix until creamy.
Pour in pan greased with butter.
Bake in 350 degree preheated oven.
Bake 30-40 minutes.
Watch-should be soft-not dry.
